This summer has been a scorcher! And, if you’re anything like me, you want to spend the most time outside soaking up the sun and spending time with friends in family. Ideally, all of my time would be spent by the pool. At some point, however, dinner has to be served!

I just discovered the beauty of the quick pickle. This recipe takes no more than five minutes and works on almost anything, I kid you not! The main ingredient is vinegar (I used apple cider vinegar for the health benefits) which gives whatever fruit or veg you’re using that quintessential tang that pickling brings. Add some spices, including mustard seeds and juniper berries, and you have yourself a pickle!

Now, the only catch with this is that it can’t sit in your pantry like a regular pickle since the jars aren’t being hermetically sealed. But, that’s what makes it quick after all. Just place it in your fridge and you’re good to go! I love the pickled onions on burgers and salads, the peaches on their own or on top of yogurt, and the cabbage in salad! There are unlimited options, and most of the stuff should be in your kitchen already.

makes 1 jar

1 cup of cut up fruits or veggies (onions, cabbage, peaches, cucumbers… get creative!)
1/2 cup apple cider vinegar
1/2 cup water
pinch of salt
1 tsp sugar
1 tsp mustard seeds
1 tsp juniper berries

Put ingredient in 1 mason jar. Place rest of ingredients in small pot and simmer over medium heat on stove. Pour into filled jar, cap tightly, and place immediately in refrigerator. Enjoy!
