Eggnog French Toast and Maple Glazed Bacon

Ingredients

Eggnog French Toast Casserole

  • 1 loaf brioche, sliced into 1” slices
  • 6 eggs
  • cups eggnog
  • ¼ teaspoon nutmeg
  • 1 teaspoon cinnamon

Maple-Glazed Bacon

  • 24 slices bacon
  • ½ cup maple syrup
  • 1 teaspoon Dijon mustard

Instructions

Eggnog French Toast Casserole

  • Preheat oven to 350 degrees.
  • Layer slices of brioche into a 13” x 9” baking dish.
  • Whisk together remaining ingredients and pour over brioche slices.
  • Press bread into custard to make sure each gets properly soaked. Let sit for at least 20 minutes, and up to overnight.
  • Bake until set and slightly puffed, about 30 minutes.
  • Serve warm with bacon, macerated berries, and/or maple syrup.

Maple-Glazed Bacon

  • Preheat oven to 400 degrees.
  • Place the bacon on a rack and then on a cookie sheet. Place in oven to cook for just a few minutes until it is starting to brown, but not yet crispy.
  • In a small bowl whisk together the maple syrup, mustard and sugar. Remove the bacon from the oven and with a pastry brush, apply glaze to both sides.
  • Return to oven and cook about another 3 minutes or until desired crispness.
  • Serve immediately – before everyone eats it.
