Strawberry & Mint Moscow Mule

Moscow Mule Pitcher
- 4 cans ginger beer
- 2 cups vodka
- 1/2 cup fresh squeezed lime juice
- 1/4 cup strawberry simple syrup
- 1/2 cup fresh mint
Strawberry Simple Syrup
- 1 pint strawberries, stemmed and cut into quarters - or frozen strawberries
- 1/2 cup sugar
- 1 cup water
Moscow Mule Pitcher
In a large pitcher muddle the mint for 2 minutes, or until fragrant.
Add ginger beer, vodka, lime juice, and strawberry simple syrup - mix well and chill in fridge until ready to serve!
When ready, serve in a glass over crushed ice and garnish with a wedge of strawberry and mint.
Strawberry Simple Syrup
In a small saucepan over medium-high heat, combine the strawberries, sugar and water.
Reduce for 5 minutes, or until the sugar has fully dissolved.
Transfer to a blender and puree until smooth.
Let cool before using.
Can be made 2-3 days in advance.
