Whether you’re Irish or Irish in spirit, we can all agree that St. Patrick’s Day is a fun excuse to break out our spring colors and eat all of the greens. Some go the more traditional route with Irish soda bread and corned beef and cabbage, while others go for the green eggs and ham or green-themed sweets.
This year, I’m celebrating St. Patrick’s Day with a healthier twist. I’m going green with a seasonal salad, a gorgeous avocado toast, an Italian springtime soup, and an herbaceous potato salad. Since life is all about balance, I’m topping off my menu with a Cucumber and Cilantro Tonic that’ll have you relaxed and ready to celebrate.
Springtime Butter Lettuce Salad with Radishes, Avocado, and a Honey Tarragon Vinaigrette

Avocado Toast with Shaved Radishes, Arugula, Sea Salt, Olive Oil, and Sesame Seeds
I love to start my day with avocado toast! Not only is it delicious, but it’s LOADED with nutrients. And, if you know me, you know that I love to play with my food. Avocado gives me a blank canvas to create beautiful plates reminiscent of Picasso’s best. I should be featured at the MoMA, don’t you think!? Garden Herb New Potato Salad
I love a great potato salad! So often people assume that it has to be smothered in mayonnaise or another fat in order to taste good. But, when you’ve got a beautiful garden of fresh herbs at your fingertips, this couldn’t be further from the truth! The beauty of using fresh herbs is that you can play with your flavor combinations depending on the season. Here’s a version I know you’ll love.
