I am still basking in the memory of my incredible trip to Langara Island Lodge. The food was outstanding. One of the best dishes I had during my stay was this delectable Crab Cake. Make them at home and see for yourself! As always, for best results use the best quality crab you can find!

Langara Island Crab Cakes

9 ounces fresh Dungeness crab
3 tablespoons celery, minced
2 tablespoons shallot, minced
1 tablespoon fresh thyme, minced
1 tablespoon fresh tarragon, minced
2 tablespoons mayo
Salt and white pepper to taste
1 cup Panko
1 tablespoon olive oil
1 tablespoon butter
Combine all the ingredients except panko and set aside. Form the crab cakes into 3 inch rounds and coat by rolling in panko and pressing down so that the panko adheres to the cake.
Preheat your oven to 350 degrees. Heat a nonstick skillet with a tablespoon of olive oil and a tablespoon of butter and panfry the crab cake until you get the right golden brown color on both sides. Then put in the oven for about 5 minutes. Eat right away!
