I don’t know about you, but when I stepped out of my house yesterday (on crutches… but that’s a whole other story), I took a deep breathe in and realized that spring had finally sprung! The trees in Central Park are blooming and nature is ALIVE!!! Ah.. winter is over. Big Sigh!!
And I’m wanting to cook something healthy today. I have started obsessing over bowls. I don’t mean the actual glass bowl, I’m talking about different kinds of food bowls. I recently picked up a cookbook that I love called Bowl by Lukas Volger. The photos are so evocative and the recipes inspiring. You can make virtually anything in a bowl. It’s kind of a one pot meal, but instead it is a one bowl meal layered with so many different flavors!
When I got home, I decided to go through my pantry, and fridge and came up with something simple, but yet delicious and I’m calling it…. Not your average rice bowl.
The bowl layers consist of: Brown chipotle lime rice, lentils and green beans, sliced avocado, radish salsa, and I finish off with a sprinkle of crunchy pomegranate seeds.
The acidity from the rice and salsa cuts through the earthy lentil taste, while combining vegan and healthy food into a mouthwatering, juicy, and hearty spoonful. Bowls are the best! What are your bowl ideas?
