We can all agree that a bubbly Prosecco cocktail has a way of making any occasion into a special night to remember. This has been a tough year on all of us, but sharing stories with friends over cocktails has been a pastime that brings me so much joy. After all, my intimate dinner parties wouldn’t be complete without one of my signature cocktails!

One of the most popular hostess gifts that I’ve received over the years has been a bottle of Prosecco. It’s just the thing to show your appreciation! I’ve come up with a Prosecco cocktail that puts my favorite hostess gift to spectacular use. Pair Northern Italy’s most celebrated sparkling wine with a splash of Elderflower liqueur and a dash of rosemary-infused simple syrup for a perfectly balanced cocktail.

Ingredients

  • 1 bottle chilled Prosecco
  • 4 tbsp St Germain Elderflower Liqueur
  • 4 tbsp rosemary-infused simple syrup recipe below
  • 1 inch piece of lemon peel
  • 4 sprigs rosemary

Rosemary-Infused Simple Syrup

  • 1 cup sugar
  • 4-6 rosemary sprigs
  • 1 cup water

Instructions

Rosemary-Infused Simple Syrup

  • Bring water to a boil, add sugar, and stir to dissolve.
  • Add in rosemary spears. Let infusion boil for 60 seconds. Remove pan from heat and steep for 30 minutes.
  • Pour cooled syrup through mesh strainer and into glass jar. Store in fridge for up to 2 weeks.

Prosecco Cocktail with Elderflower and Rosemary

  • Gather 4 champagne flutes. Into each glass, pour 1 tbsp of rosemary-infused simple syrup and 1 tbsp St Germain Elderflower liqueur.
  • Rub lemon peel around the rim of each glass. Place 1 stem of rosemary in each glass and fill to the top with chilled Prosecco.
